Eat healthy, have some comfort food thats good for you.

Lucille’s Hearty Red Potato Stew
Thirty-five minutes preparation, serving two
·         2 cup of water
·         3 small red potatoes (chopped)
·         1/3 cup of carrots or 1 carrot (chopped)
·         1/3 cup of bell pepper (chopped)
·         1/3 cup of onions (chopped)
·         1/3 cup of celery or 1 ½ stalk (chopped)
·         1 Roma tomato (chopped)
·         3/4 cup of ground beef
·         Mrs. Dash seasoning ¼ teaspoon
·         Garlic salt or powder ¼ teaspoon
·         Lawry’s seasoning ¼ teaspoon

  In large skillet pour in water then slowly simmer three chopped red potatoes with garlic salt for 10 minute. Keep lid on skillet and stir occasionally to prevent sticking. Add onions, celery, carrots, tomato, Mrs. Dash seasoning and slow simmer another 10 minutes. In separate skillet, cook ground beef until brown with Lawry’s seasoning. Substitute ground beef with tofu, chicken, or garbanzo beans.
After cooking ground beef, drain oil and towel pat to get oils out of meat then add it to the other ingredients with bell peppers. Cook at a slow simmer for another 10 minutes.
